3x Thursday

Meme time! Thank you Missy!

1. How has your sleep been lately? Are you getting any? Is it fitful?
Lo has been sleeping through the night since she was about two months old. I feel sooo lucky in this department because many mothers aren’t so lucky. I sleep well, really. It’s really hard for me to get up in the morning but that’s just how I am. When you have a baby who wakes up and is ready to start the day, the only real option I have is to hit the ground running as soon as she wakes. I get to sleep in every now and then which is really nice, but even with Vernon taking care of everything, it’s hard. I just love to get up with my baby girl!

2. How’s your general health lately?
I’d say my overall health is pretty good. I’m getting lots of “you’re losing weight” comments lately and I’ve chalked it up to the fact that I started eating breakfast. I have never been a breakfast eater until the past couple of weeks. I got sick a while back ago so Vernon was in charge of grocery shopping and he came home with those little frozen sausage biscuits. I heated up a pack of those every morning until they were gone and it became a habit. I’m actually pretty shocked that eating breakfast has made such a habit. I believe it’s really kicked my metabolism into gear.

3. How is your mental state these days? Feeling okay upstairs?
My mental state can get a little crazy, but only when I’m feeling like I really need a break. This happened recently and I took it out on Vernon. We fought for a few days and it was really, really draining… we don’t normally fight much and when we do I feel like my world is coming to an end. Dramatic, I know. Other than that though, I feel more than okay upstairs!

Moving pictures

I love to be behind a camera. One of the things that I hate about the circumstances of Lo’s birth is that everything was so rushed that we didn’t really get to take any pictures until after she was born and settled in the NICU. I love taking pictures so much, though, that I’ve definitely made up for it since.

By the time she was a few months old, I realized that I really needed to invest in a video camera. I already own a Panasonic DVR camcorder, but I really wanted something a bit more convenient. I decided on the Kodak Vi8 pocket camcorder and I LOVE it! I don’t use it as much as had hoped, but I recently decided to just leave it sitting out so that I can easily grab it and start recording whenever the situation arises instead of keeping it in a pocket in my purse. This also reduces the risk of it getting stolen or lost, which I seem to be prone to.

It was a toss up between a Flip camcorder and the Kodak. I ultimately decided on the Kodak because I liked the body better, being able to use your own memory card, and a lot of great reviews on the quality of video it produces. I’m really happy with my purchase and feel that it was well worth the $200 I paid for it!

Marinated Baked Pork

I have not been making any effort at all to eat well. I don’t eat HORRIBLY to begin with, but I can’t remember the last time I had a salad. I have been managing to cook almost every night with the exception of easy nights where we throw a pizza in the oven or Vernon wants Chinese food. Even better, I’ve been making sure to pack the leftovers in my lunch the next day. It really helps that I found a super cute lunchbox on sale at Eckerd.

Even though I haven’t been trying, Vernon says I’m getting thinner and a pair of pants that I was squeezing into before now seems to be loser. And even though I seem to be losing weight, it’s almost like my C-section stomach issue gets worse. I need a belly fat reduction or belly skin reduction or something.

For dinner last night, I made marinated baked pork chops from a recipe I found online and Vernon said it was better than Chinese food. The sauce was very Chinese food like, sweet and salty. I didn’t actually marinate the chops but next time I totally will, as well as not accidentally overcook them. I will also double the sauce because what I made was supposed to be enough for 6 pork chops but only worked for two. I’ll definitely be adding this recipe into the rotation because it is AWESOME considering how easy it is. We normally either fry or shake n bake our pork chops and I’m happy to have an alternative. I was getting pretty sick of that stuff.

Crafty

I’ve always been a crafty person. These days the craft I do most is crochet. I’m not the BEST at it, but I do enjoy it and the more you do it the better you get. I made Lo a bunny for her Easter basket, a baby blanket (I started it when I was about 4 months pregnant and didn’t finish until she was like 6 or 7 months. Whoops!), and a baby poncho.

Finished

It seems like in the fall and winter months I really get the urge to crochet but once it starts getting warm out, I lose steam. Within the past few days though, I’ve really felt like busting out my sewing machine. I found a great website full of free patterns, one in particular that I’d like to try is a purse organizer. It’s similar to those As Seen On TV Kangaroo Keeper things. I’m pretty sure I have all the materials I need to make one, I have lots and lots of random fabrics and interfacing from another project I never got around to.

My purse is ALWAYS a mess, so I making the purse organizer will help keep it straightened out AND scratch my itch to sew ;)

Wedding bells?

Twice in the past week someone has mentioned Vernon and I getting married. We definitely want to get married, I was hoping for sometime this year… I just don’t know about having a wedding. At first I was thinking about doing something small, then I decided to just have a party or get together to celebrate, then I go back to a wedding, then I change my mind and want to go to the courthouse and just get it over with.

I really just want the day we get married to be a memorable one. Not necessarily one filled with wedding party gifts, bridal showers, best men, or any of that crap. Just a nice day with our family that we will be able to look back on and think about what a great day it was.

Lunch

I normally don’t buy a roast very often as the ones at our grocery store are usually pretty large and it feels like a waste. We can’t ever eat the whole thing and we aren’t always the best at eating our leftovers. This week I decided to buy one and instead of putting the left over roast and veggies in the fridge to spoil, I made SURE to shred the meat to make BBQ sandwiches. This is something I always say I’m going to do and I never actually do it. But I did it!!

I got a roast that was a little over 3 1/2 pounds (it cost $12.34)  and it amazingly made enough for pot roast with veggies and mashed potatoes as well as leftovers for lunch. It made enough bbq for another dinner and lunches for Vernon and I for like two days with MORE leftovers. Unfortunately we’re out of baked beans and potato salad, so I don’t know if it’ll be eaten.

It’s not quite food that burns fat… I just love it though, buying a roast at first seemed too expensive to purchase often until I stopped being lazy and realized that the $12.34 I spent on one roast can go a LONG way! Not to mention making the meat for all of those meals only dirties up 1 dish! Love my crock pot ;)
